Japanese Harusame Noodle Soup

Harusame soup is a light, low calorie, delicious soup made with semi-transparent noodles (harusame noodles). It is made with mushrooms, spinach, and green onions. The soup is flavored with a chicken bouillon base, and enhanced with soy sauce, salt, and sesame oil. Finally a beaten egg is added to finish this delicious soup. Please give it a try!

Ingredients
  

Main Ingredients

  • 5 mushrooms
  • 1 bunch green onions
  • 70 g spinach
  • 1 egg
  • 1 tbsp vegetable oil
  • 40 g harusame

Soup Base Flavoring

  • 800 ml water
  • 1/2 tsp chicken bouillon
  • 1 tsp salt
  • 1 tsp soy sauce
  • 1 tbsp sesame oil

Instructions
 

  • Slice the mushrooms, green onions and spinach with a knife on a cutting board
  • Add 1 tbsp of vegetable oil into a pot
  • Add the mushrooms and spinach and cook on medium heat for 1 minute

  • Add 800 ml of water to the same pot and boil the water
  • Add the harusame noodles to the boiling water
  • Add the chicken bouillon, salt, and soy sauce to the soup
  • Beat an egg in a mixing bowl and slowly add to the soup

  • Finally, add the green onions and sesame oil and mix well
  • Serve and enjoy!
