Japanese Harusame Noodle Soup Recipe is a light, low calorie, delicious soup recipe made with semi-transparent noodles (harusame noodles). It is made with mushrooms, spinach, and green onions. Harusame soup and harusame salad are filling, but have few calories. Harusame noodles are low calorie alternatives to other types of noodles because they are made from beans.

Tips for Making Japanese Harusame Noodle Soup Recipe

  • Harusame is a healthy, low calorie alternative to other types of noodles. However, the noodles make you feel full! I highly recommend this dish if you are dieting and want to lose weight. Also, various healthy vegetables can be added to enhance your diet.
  • As a soup, nearly anything can be added to this dish. If you have left over vegetables that are near their expiration date, you can add them into this soup.
  • I recommend waiting about 20-30 seconds after adding the beaten egg. If you stir it too quickly, the soup will turn yellowish, as opposed to having strings of cooked egg throughout the soup.

Japanese Harusame Noodle Soup

Harusame soup is a light, low calorie, delicious soup made with semi-transparent noodles (harusame noodles). It is made with mushrooms, spinach, and green onions. Ingredients
  

Main Ingredients

  • 5 mushrooms
  • 1 bunch green onions
  • 70 g spinach
  • 1 egg
  • 1 tbsp vegetable oil
  • 40 g harusame

Soup Base Flavoring

  • 800 ml water
  • 1/2 tsp chicken bouillon
  • 1 tsp salt
  • 1 tsp soy sauce
  • 1 tbsp sesame oil

Instructions
 

  • Slice the mushrooms, green onions and spinach with a knife on a cutting board
  • Add 1 tbsp of vegetable oil into a pot
  • Add the mushrooms and spinach and cook on medium heat for 1 minute

  • Add 800 ml of water to the same pot and boil the water
  • Add the harusame noodles to the boiling water
  • Add the chicken bouillon, salt, and soy sauce to the soup
  • Beat an egg in a mixing bowl and slowly add to the soup

  • Finally, add the green onions and sesame oil and mix well
  • Serve and enjoy!
