Harusame Salad with Beef Strips Recipe is healthy, easy to make, and tastes delicious. Harusame noodles are loaded with strips of beef, slices of red onions, and topped with cucumbers, yellow and red peppers. It’s a balanced meal containing carbohydrates, protein, and loads of vegetables. I like to add a homemade dressing with vinegar, dashi, sesame oil and soy sauce to flavor the dish. This recipe contains harusame noodles (Japanese glass noddles). The kanji for harusame is 春雨. I really like these noodles and also like the meaning of the kanji. The first kanji means “spring” while the second kanji means “rain”. The name itself is poetic. The noodles do look like a gentle spring rain. These noodles are light, refreshing and contain low calories. As a salad, this recipe is versatile and can contain many different toppings.   • This recipe is versatile and can be made into a seafood version. I’ve also made this recipe with shrimp and squid and it was delicious. Additionally, you can try this recipe with chicken instead of beef.
  • In this recipe, I created a Japanese style sauce. This recipe is also good with a sweet chili sauce to create a Southern Asian style taste.
  • Harusame has low calories and is great for dieting. It makes you feel full even though it has low calories. Also, you can create this salad without any meat or seafood if you want even fewer calories.

Ingredients
  

Salad Ingredients

  • 1/4 red onion
  • 1/4 red pepper
  • 1/4 green pepper
  • 1/4 cucumber
  • 200 g thinly sliced beef strips (~1/2 lbs)
  • 40 g harusame noodles (~1.5 ounces)

Salad Dressing Ingredients

  • 2 tbsp vinegar
  • 1 tbsp dashi
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Instructions
 

Salad Ingredient Preparation

  • Boil water for harusame noodles in a pot
  • Boil water for the thinly sliced beef strips in another pot
  • Grate the onion into thin slices and soak in water for 10 minutes. Afterwards remove the water and let the onions dry.

  • Dice the 1/4 red and yellow pepper into small chunks
  • Dice the 1/4 cucumber into small chunks
  • Add the thinly sliced beef strips into the boiling water and cook for about 3 minutes. The time may vary based on the thickness of your beef strips.
  • Add the harusame noodles into the boiling water and cook for 3 minutes
  • Separately, cool both the beef strips and harusame noodles using a strainer and cold water
  • Make the base of the salad with the harusame noodles. Add the beef strips and top with red onions.

Preparing the Salad Dressing

  • Add the vinegar, dashi, soy sauce, and sesame oil into a mixing cup and mix well
  • Drizzle the dressing over the salad and enjoy!
