Japanese Harusame Noodle Soup

Harusame soup is a light, low calorie, delicious soup made with semi-transparent noodles (harusame noodles). It is made with mushrooms, spinach, and green onions. The soup is flavored with a chicken bouillon base, and enhanced with soy sauce, salt, and sesame oil. Finally a beaten egg is added to finish this delicious soup. Please give it a try!

Ingredients
  

Main Ingredients
  • 5 mushrooms
  • 1 bunch green onions
  • 70 g spinach
  • 1 egg
  • 1 tbsp vegetable oil
  • 40 g harusame
Soup Base Flavoring
  • 800 ml water
  • 1/2 tsp chicken bouillon
  • 1 tsp salt
  • 1 tsp soy sauce
  • 1 tbsp sesame oil

Method
 

  1. Slice the mushrooms, green onions and spinach with a knife on a cutting board
  2. Add 1 tbsp of vegetable oil into a pot
  3. Add the mushrooms and spinach and cook on medium heat for 1 minute

  4. Add 800 ml of water to the same pot and boil the water
  5. Add the harusame noodles to the boiling water
  6. Add the chicken bouillon, salt, and soy sauce to the soup
  7. Beat an egg in a mixing bowl and slowly add to the soup

  8. Finally, add the green onions and sesame oil and mix well
  9. Serve and enjoy!
