Slice the potatoes, carrots, and onions into bite sized pieces
Cut the beef into bite sized chunks
Add vegetable oil to a pan on the stove and heat
Add the grated garlic, beef, potatoes, carrots, and onions into the pan
Stir on medium heat until the color of the onions changes
Add the 2 bundles of spinach into a bowl of hot water for 5 minutes
Afterwards, remove the spinach from the water and slice into bite-sized pieces
After the onions have changed color, add a can of diced tomatoes and 1.5 cups of water into the pan
Add 2 bay leaves into the pan, cover, and allow to simmer for 5 minutes
Remove any lye that may accumulate in the pan and also remove the bay leaves
Add 100 grams of Japanese curry roux (or any roux) into the pan, cover and simmer for another 5 minutes
Add the sliced spinach and mix everything
When the curry roux is completely dissolved, the dish is finish. Enjoy!
