Japanese Hamburger Steak
Japanese hamburger steak is called hamburg ( ハンバーグ ) in Japanese. It is a popular comfort food commonly enjoyed both at home and in Japanese restaurants. While it may sound similar to a Western hamburger, Japanese hamburg steak is quite different in both texture and presentation — though it remains a favorite among many people around the world.
Unlike a traditional American hamburger served on a bun, Japanese hamburg steak is typically served as a juicy meat patty on a plate with rice and vegetables. The texture is softer and more tender, similar to meatloaf, and it is usually topped with a rich savory sauce rather than standard burger toppings.
Japanese restaurants often serve hamburg steak with sides such as buttered corn, french fries, salad, or rice. At home, we enjoy serving it with fresh vegetables and fruit. In this meal, we paired the hamburg steak with salad and strawberries for dessert.
I first tried Japanese hamburg steak while living in Japan, and it quickly became one of my favorite Japanese dishes. My wife still makes it at home, and we wanted to share this recipe so you can enjoy authentic homemade Japanese hamburg steak as well.

Tips on how to make the perfect Japanese Hamburger Steak
- It is important to stir the hamburg mix with your hands until it is well mixed. If you don’t mix it well, it can break apart when you try to flip the patty.
- Other ingredients such as minced carrots or mushrooms can also be added, but if you add too many vegetables to the meat, it will fall apart while cooking.
- If you prefer a sweeter flavor, the onions can be caramelized before adding them to the hamburger.
- Indenting each patty with your fingers is important to evenly cook the meat. The meat will expand during cooking and remove the indentation.

Japanese Hamburger Steak

Method
- Mince half an onion
- Add the minced onion and the hamburger into a large bowl
- Add 1.5 tsp soy sauce, 4 tbsp of panko, salt, pepper and an egg to the bowl
- Mix everything by hand
- After mixing, divide the hamburger into 4 even batches to make 4 patties
- Form the patties into an oval shape, slap against your hands to remove the air, and gentle press the center in the top to evenly cook the meat
- Melt the butter on a fry pan and add the hamburger patties. Fry over medium heat for about 2 minutes. Flip the hamburger and fry again for about 2 minutes
- Flip the hamburgers every 2 minutes until their form solidifies. After solidifying, cover pan with a lid and cook on low heat for 5 minutes
- After finishing the hamburger, remove the patties, but keep the remaining oil as a base for the sauce
- Add the mushrooms and fry them on medium heat in the left over oil
- Add the ketchup, the Worcestershire sauce, and 1.5 tsp of soy sauce.
- Simmer the sauce and the mushrooms on low heat for 5 minutes
- Add the sauce to the hamburger patties and enjoy!
