You can make this simple caramel pudding recipe with only 4 ingredients: eggs, sugar, milk, and vanilla essence. In Japan, and probably other countries, we don’t often make desserts at home. They are not as frequent as main meals. However, in Japan, when families decide to make a dessert, pudding is often made because it is easy and only requires 4 ingredients. While I was reading online about caramel pudding, I came across other names such as caramel custard pudding that originated in France. Both recipes seem similar, and I’m not sure of the actual origin. But, caramel pudding is often enjoyed in Japan! I hope that you can make caramel pudding and enjoy it at home too.

Tips for Making Caramel Pudding Recipe

  • Vanilla essence adds a comforting aroma, but is not necessary if you don’t have it available. Without the vanilla essence, this caramel pudding can be made with only 3 ingredients!
  • Adding a washcloth to your pan is important to prevent your pudding from being burnt. The stove top’s heat can conduct directly to the bottom of your pudding pan without the washcloth. If you place the pudding pan directly in the frying pan, the bottom of the pudding will burn.
  • You must use the strainer in order remove small agglomerations that exist in the egg. If you do not remove the agglomerations, the surface of the pudding may have pits and holes. Also when you use your spoon to take a portion of the pudding, you will notice similar defects within the pudding.
  • Caramel can be difficult to make and can burn easily if not contently watched and stirred. Please ensure that you turn off the heat before adding the water. After adding water it is important to vigorously stir to break up any agglomerations. I included a YouTube video to better illustrate how to make the caramel.

Caramel pudding is an easy desert to make that only requires 4 ingredients: eggs, milk, sugar, and vanilla essence. The comforting aroma of the vanilla and the sweet taste of the caramel will entice you to make this recipe over and over again as it becomes a family favorite.

  • Frying Pan
  • Mixing Bowl
  • Whisk
  • Strainer

Ingredients
  

  • 2 eggs
  • 30 grams sugar (2.5 tablespoons)
  • 200 mL milk (0.85 cups)
  • 2-3 drops vanilla essence

Instructions
 

Egg Mixture Instructions

  • Add 2 eggs and 30 grams of sugar into a mixing bowl
  • Mix well using a whisk
  • Meanwhile heat up 200 mL (0.85 cups) of milk in the microwave
  • Slowly add the milk in small batches into the egg mixture and whisk
  • Finally add a couple of drops of vanilla essence and do a final mix
  • Use a strainer to remove any agglomerations that may exist in the mixture
  • Pour the egg mixture into small pudding bowls and wrap with aluminum foil

  • Boil about 1 cm of water in a frying pan and place a wash cloth on the bottom of the pan
  • Add the three pudding bowls on to the wash cloth, cover, and heat on low heat for 10 minutes
  • Turn off heat, remove pan from heat, and keep covered for another 10 minutes

Caramel Instructions

  • Add 30 grams of sugar into a frying pan
  • Heat over medium heat
  • After the sugar melts, turn off the heat
  • Add 2 tbsp of hot water into the frying pan in small batches and mix well with the sugar

  • Add a small amount of caramel on top of the egg mixture

  • Place the 3 small pudding bowls into the fridge and chill for at least an hour
  • Enjoy this delicious and easy to make caramel pudding!
